Raw Snickers Bars

These raw snickers bars are definitely up there in our favourites, they are absolutely delicious and a great on the go snack or afternoon / mid morning treat. No one has EVER turned one off these down!

INGREDIENTS

For the Base:-
220g All Natural Peanut Butter (Meridian is a good choice)
80g Coconut Oil
3tbsp Agave Syrup or Honey
200g Rolled Oats
Generous pinch of salt

Caramel layer:-
1 ½ cup medjool dates
¼ cup tahini
⅓ cup water
½ tbsp coconut oil (melted)
½ tbsp raw agave syrup (or maple syrup)

Raw Chocolate
¼ cup coconut oil (melted)
¼ cup raw cacao powder
1 tbsp raw agave syrup (or maple syrup)

 

METHOD

Starting with the base, melt the coconut oil and tip all other ingredients into a bowl and mix thoroughly. The mixture should start moulding together and if you are able to form round balls you have the correct consistency – if it falls apart add another spoonful of coconut oil or peanut butter.

Line a baking tray with clingfilm and press the base mixture firmly down – at least ½ inch thick and so that it covers the whole dish. Place in the freezer whist work on the next layer.

Caramel – Add dates to the food processor and process until it becomes a paste, if it becomes very sticky, start adding the water to help liquidize the dates. Once done, add the remaining ingredients to the food processor and process until combined. Take the base out of the freezer and pour the caramel layer on top

To make the chocolate, combine melted coconut oil with maple syrup. Add raw cacao powder. Whisk with a fork until combined and chocolate mixture is smooth.

Once caramel slice is frozen, drizzle the raw chocolate over the top. Put back to the freezer for 15 minutes to set. Once chocolate has gone hard, cut into bars and try not to resist eating immediately :) If you do have some left over, they are best kept in the freezer and you can eat them straight from frozen.
