Sweet Potato Fries & Guacamole

Serves 4 ppl


For the chips…
4 large sweet potatoes or 6 regular sized ones
Olive Oil
2 teaspoons of paprika

For the guac…
2 large avocados
1 large tomato
Half a red onion
Juice of half a large lemon
1 small red or green chilli
A small handful of coriander



Preheat the oven to 220 degrees Celsius. Leaving the skins on, slice the sweet potatoes into the shape of ‘fries’ as much as possible. Don’t worry bout the odd shapes as this creates authenticity and shows that they are homemade. Place in a baking tray and drizzle with olive oil and sprinkle with the paprika. Add two pinches of salt and lots of black pepper. Shake the baking tray and make sure all the fries are covered evenly. Bake for 45 mins, checking and turning occasionally.

Meanwhile, in a food processor add the avocado, tomato, lemon juice, red onion, chilli and 80% of the coriander. Add two pinches of salt and black pepper. Blitz until nice and combined but still with a few chunky bits :)

Remove the fries from the oven and allow to cool slightly – serve in a large bowl with the guacamole on the side and sprinkle with the remaining coriander.
