Vegan No Bake Key Lime Pie

We have been meaning to make this creamy pie for a while and it is safe to say it did not disappoint 🙂 I hope you love it as much as we do! We love citrus fruits in desserts – especially as the sun starts shining and the bbqs get fired up! And this ‘guilt free’ option is just an all round winner!


Food processor
Quiche / Flan dish approx 20-25cm in diameter
Cling Film


125g Walnuts
1 cup pitted medjool dates
3 table spoons of melted coconut oil

200g cashews soaked in boiling water for 2 hours
150ml coconut cream
1 peeled and pitted avocado
1/2 cup fresh lime juice (approx 4 limes)
1/4 cup of agave syrup or non vegan alternative like honey if you wish
1/4 cup melted coconut oil
1/2 teaspoon of vanilla extract
Zest of a lime to sprinkle on top


Cover the cashews with boiling water in a bowl for at least two hours. Removing them any sooner will result in your filling being a little grainy as the cashews will not have broken down enough when blitzing! We have made that mistake..!

Once the cashews are ready, you can get to work! We start with the base, blitz the walnuts in the food processor with the pitted dates and coconut oil until all the ingredients combine.

Line your quiche / flan dish with cling film (just so that it is easier to remove once finished) and evenly spread the base around and up the sides with your fingers. Once done pop in the fridge or freezer to set whilst you get to work on your filling.

Now for the filling! Add the soaked cashews (draining the remaining water away down the sink) and all the other filling ingredients into the clean food processor until well combined and creamy! You should have a nice even consistency and it should be lovely and green due to the help of the wonderful avocado!

Grab the base from the fridge or freezer and pour the filling in until you get to the top! Then set in the fridge for at least 5 hours and the freezer for approximately 4 hours. You will know when it is ready as it will have solidified!

When you are ready to serve (you can serve straight from the freezer if you wish) grate the zest of a lime on top for that extra wow factor.
